10/22/11: Grilled Salmon & Zucchini Ricotta Bites

Andy was on call all week long and we have wanted to make a certain eggplant dish. Well it didn't happen and by the time we go around to it yesterday our eggplant was squishy and had gone bad. BUT we did discover more goodies in our garden:


SO we decided to use our lovely looking zucchini instead. The recipe for the Ricotta Bites is from Food Network Magazine. We didn't fry them in oil and we used panko for the breading. We baked the zucchini in the oven at 350 for 25 minutes or so. Our basil got frostbite, so we used parsley from the garden, along w/tomato and a mix of malt vinegar and balsamic for the topping! The salmon has just a little olive oil, salt and pepper and a squirt of lime. 



The green thing in the middle is just a grilled pepper. It was tasty.

Now we're getting antsy. I hit uncomfortable a few weeks ago...I can deal with that. Now we are just antsy to meet the little guy and introduce him to his family and friends. I think Andy & I are in fast forward mode all of a sudden, just wanting the time to fly by... Looking at pictures from last week it appears I may have dropped slightly...maybe?...maybe not? I guess I can sort of breath a little easier. I'm not waddling like many people say you do when this happens...I'm just slow...haha. I'm not nesting either. I've posted to Facebook to tell friends what I've been up to and they say I am, but really that's just me. I'm totally anal retentive and a perfectionist and have to have things in their place. This is my norm. Not anything new.  38 weeks 37 weeks As the time draws near my patients at work continue to say things like, "You're still here?" and "Had that baby yet?" Augie's Birth Story

So it's taken me a while to sit down and write about this. We've been adjusting to lots of new daily adventures. And every minute of it has been a blast. I can say I have no complaints! Life as new parents is great and I can only see it getting better. We're adjusting to our different sleep schedule which is really helping our mental health...haha. Andy heads  back to work on Monday next week and I can say I really will miss all of the help that he has provided Augie and I over the past three weeks. He's an amazing husband and father. So here it goes- Sunday, the 15th, we slept in, ate left over pizza for lunch, celebrated birthdays at Andy's Grandma Jeanette's...I ate something like three different kinds of cake and ice cream (and I think I went back for a second round of sweets), hung out at my parents for a bit, then came home and ate macaroni and cheese, from a box. Not our usual day of fairly healthy eating, but that's what we had. After dinner ...
