Oatmeal Mess

Our current favorite morning meal is McCann's steel cut Irish oatmeal with a slew of goodies added in. Supposedly McCann's only processes steel cut oats in their mills. They can't claim to be gluten free because of possible contaminants in route to the plants, but they haven't seemed to cause any issue for us so we'll keep eating them. I like the taste..no funky aftertaste like with some other oats. We've opted for the 5 minute quick oats out of convenience. We have tried making them at night and storing in the fridge in jars for quick heating up...this works too, but we like it freshly made.

This morning Andy toasted the oatmeal before cooking, along with some almonds & walnuts with a bit of cinnamon and sugar.


Then he cooked up some bananas with cinnamon on the griddle.


I've been obsessed with chia seeds lately and have a healthy scoop on top of my oatmeal each day. I really like Bob's Red Mill chia seeds. Chia seeds are said to be high in Omega-3s and they do have some protein content...which I have been trying to up my protein intake. A little honey, some rice milk, and some dried cranberries make this an awesome breakfast. 


Breakfast is always better when you have a helper....

Our New Arrival: Meet August Andrew Eikstadt

Well it's been over a week since you've seen a post from me and most of you know that it's because we've been busy, busy, busy with our new arrival!!!! August Andrew Eikstadt was born on Monday January 16, 2012 at 12:57pm. Some of you have already heard me say this but here it is again: he was 7lbs 12oz and 20 inches of perfect. And seriously, I'm not lying. He's perfect. It's amazing to think that this little dude made his home inside of me for almost 10 months. He was born when I was 39 weeks 3days...just shy of his due date of 1/20/12. Yesterday he was a week old. it made me tear up a little to think how much he has already grown and changed since his birth day. We brought him home just last Wednesday, after a big snow storm moved through on Tuesday. 34 weeks...going on 35! (weird shadow makes my hair look big on top... but doesn't offset the belly growth...haha. I think we have just about everything we are supposed to need for this kid. Dr. says everything is moving along great...both Mom & baby are healthy and right on track. I get tired, toss and turn occasionally at night, my arms fall asleep at times, and recently the squirmy worm likes to kick me in the back, sending shooting pain down my sciatic nerve pathway! (fun when walking really)... but I know that it comes with the territory.  Things I'm looking forward to...besides the little guy and all the cuddly cuteness of course... laying/sleeping

38 Weeks (and counting) Belly pic

Now we're getting antsy. I hit uncomfortable a few weeks ago...I can deal with that. Now we are just antsy to meet the little guy and introduce him to his family and friends. I think Andy & I are in fast forward mode all of a sudden, just wanting the time to fly by... Looking at pictures from last week it appears I may have dropped slightly...maybe?...maybe not? I guess I can sort of breath a little easier. I'm not waddling like many people say you do when this happens...I'm just slow...haha. I'm not nesting either. I've posted to Facebook to tell friends what I've been up to and they say I am, but really that's just me. I'm totally anal retentive and a perfectionist and have to have things in their place. This is my norm. Not anything new.  38 weeks 37 weeks As the time draws near my patients at work continue to say things like, "You're still here?" and "Had that baby yet?" (most annoying question ever). Ye
