Andy's Mom, Peggy, celebrated her 60th Birthday on Wednesday this week. We had her over last night for a crazy good meal. While I was at work, Andy started the Belgian Onion Soup at around 2:15pm...He took the lead on this one and couldn't have done a better job! It was a long process from what I hear. I got home around 5:15pm to a house that smelled AMAZING. I could actually smell it in the garage before I even made it in to the house. We didn't eat until 7:30ish (so it really did cook for a while...) and by then the flavors had married and we had a savory bowl of soup, with Sourdough bread from Mary's Market, topped with Gruyere cheese and a dash of homegrown thyme.
I started Apple Tarte Tatin as soon as I got home too. The whole process, from prep to cooking completion, was probably 1.5 hours. It's really an easy recipe to follow. I added some cinnamon to the recipe, because I just felt it was needed...I was glad I did.. Flipping it over was the hardest part. One side looks pretty while the other side looks like a party... We served it with some vanilla bean ice cream and enjoyed it even though we were stuffed from the soup!
