Going Gluten Free-Dairy Free

Over the past several weeks I've changed my diet drastically. The wee one is a gassy little man and as I have adjusted my diet, I've noticed things have changed for the better. There is a lot of information floating around about eliminating certain foods from your diet which can irritate babies digestive systems. The major players that can affect infants are dairy, wheat, soy, eggs, beans, broccoli, spinach, peanuts, and citrus fruits, among a few others. I have cut all of these out of my diet except for eggs. This means no cheese, greek yogurt and other good things that I love to eat....however I've noticed that with cutting these things out, not only is Augie's digestive system happy...so is mine. It's a win win. Of course I still miss eating a few of these things (specifically cheese, greek yo and peanut butter!), but I feel pretty good with the whole process. 

So, with undertaking this adventure we have embarked on some new dishes in the kitchen. We are still going for some go to meals like rice noodle bowls, protein (fish, beef, pork, chicken) & veg, etc. But we have started trying a few new things. 

Quinoa Bowl-This was quinoa, tomatoes, kalamatas, avocado, goat cheese and pine nuts all mashed together in a yummy bowl! 


Quinoa Stuffed Portabello Mushroom-You can't see the mushroom because it's buried underneath the quinoa mess. This had currants, yellow peppers, goat cheese, pine nuts and some mess of seasoning on top of a yummy portabello. 


Baked Rice Chex Crispy Chicken-This was so simple. It's just boneless skinless chicken breasts cut into tenders, dipped in dijon mustard and rolled in crumbled rice chex. We baked it along with some cut up sweet potatoes. It was really tasty.



Instead of ice cream we've been eating sorbet now and then AND the other day Andy made a delicious frozen treat! It was a mix of frozen banana, cocoa powder, honey, and cinnamon blended in our Ninja and frozen with a stick...It was fantastic.



Obviously we are not starving. A lot of other people have the same type of dietary restrictions and totally survive. I find it fun to scour the internet and search for recipes which we can play around with to make our own! Whatever it takes to make this guy happy!

Busy Weekend

I haven't posted anything since Saturday morning. The weekend was a blur. Saturday was our second baby shower. This one was hosted by my family for my family and some friends. Our New Arrival: Meet August Andrew Eikstadt

Well it's been over a week since you've seen a post from me and most of you know that it's because we've been busy, busy, busy with our new arrival!!!! August Andrew Eikstadt was born on Monday January 16, 2012 at 12:57pm. Some of you have already heard me say this but here it is again: he was 7lbs 12oz and 20 inches of perfect. And seriously, I'm not lying. He's perfect. It's amazing to think that this little dude made his home inside of me for almost 10 months. He was born when I was 39 weeks 3days...just shy of his due date of 1/20/12. Yesterday he was a week old. it made me tear up a little to think how much he has already grown and changed since his birth day. We brought him home just last Wednesday, after a big snow storm moved through on Tuesday. So it's taken me a while to sit down and write about this. We've been adjusting to lots of new daily adventures. And every minute of it has been a blast. I can say I have no complaints! Life as new parents is great and I can only see it getting better. We're adjusting to our different sleep schedule which is really helping our mental health...haha. Andy heads  back to work on Monday next week and I can say I really will miss all of the help that he has provided Augie and I over the past three weeks. He's an amazing husband and father. So here it goes- Sunday, the 15th, we slept in, ate left over pizza for lunch, celebrated birthdays at Andy's Grandma Jeanette's...I ate something like three different kinds of cake and ice cream (and I think I went back for a second round of sweets), hung out at my parents for a bit, then came home and ate macaroni and cheese, from a box.
